Recipe for Grilled Trout with Bush Dust Crust

Ingredients:

Pan Size Trout (700-800 grams)

Crust:

Lemon Myrtle x 1 teaspoon

Sweet Paprika x 1 teaspoon

Pinch Salt

Pinch Black Ground Pepper

1 Lime Finger

2 Teaspoon Chopped Parsley

2 Teaspoon Plain Flour

Method:

Place all ingredients for crust into a mortar and pound into a fine paste and set aside.

Score the Trout three times on each side and cover liberally on each side with the crust ingredients and grill on  a moderate hot plate/ charcoal grill for 4/5 minutes on each side until just cooked through. Test by piercing the flesh just behind the head of the trout.

Set aside while preparing a Rocket and Spinach Salad.

Serve with Potatoes of your choice, salad and a wedge of lemon.
